Freezer Meals

Stroganoff Sauce

1 Lb Hamburger (cooked)
1 Can Cream of Mushroom Soup
1 8oz. Container of Sour Cream
1 Can mushrooms (optional)
*Mix all ingredients well, pour into Ziploc bag and freeze. To cook, un-thaw in refrigerator and re-heat in sauce pan.

Pizza Roll Ups

1 bag Scone dough
1 C spaghetti Sauce
½ pkg pepperoni
1-2 C cheese
*Flatten out small balls of dough and place a small amount of pepperoni, sauce and cheese in the middle. Fold over and round into a ball. Place on a cookie sheet. Flash freeze. Place individual balls in ziplock bag. To serve: thaw in fridge until soft. Bake at 350 for 10-15 minutes. Drizzle a small amount of spaghetti sauce over the top when you are ready to eat.

Meatloaf

6 LB ground beef, unthawed, uncooked
4 eggs - beaten
2 pkg onion and mushroom soup mix (each)
1 C Ketchup
1 C BBQ sauce
½ C Worcestershire sauce
2 C oatmeal
*Mix all ingredients well. Put in aluminum lined dish. Flash freeze. Remove from dish and put in ziplock. To serve: thaw for 1 day in fridge, put back in dish and bake at 350 for 1 hour.

Hearty Chicken Pot Pie

1 bag (14 oz) frozen potatoes (hash browns – southern style)
1 bag frozen vegetables – any variety
1 cup cut-up cooked chicken
1 jar (12 oz) chicken gravy OR
2 lrg cans of cream of soup (chicken and/or mushroom) and 1 can chicken broth
**freeze in Ziploc**

Biscuit:
2 cups (8oz) shredded Cheddar cheese
1 cup Original Bisquick
¼ cup milk
¼ teaspoon dried thyme leaves
2 eggs
Heat oven to 375°. Heat vegetables, chicken and gravy to boiling in
2-quart saucepan, stirring frequently.
Stir remaining ingredients until blended. Pour chicken mixture into
ungreased 2-quart casserole. Pour batter over chicken mixture.
Bake uncovered 35 to 40 minutes or until crust is golden brown. Let
stand 5 minutes before serving. 6 servings.

Spinach Manicotti

8 oz. pkg manicotti shells
10 oz. frozen chopped spinach
16 oz ricotta cheese, grated
1 tsp olive oil
1 C chopped tomatoes
½ tsp minced garlic (or 1 clove fresh)
1 med onion, chopped
1/4 tsp nutmeg
*Cook the manicotti shells according to the package directions. Drain and set aside.Thaw & cook frozen spinach according to instructions. Drain well and squeeze out excess liquid (using paper towels makes this easier!) In a small bowl, combine mozza, ricotta, egg white, nutmeg (and salt and pepper to taste, if desired). Stuff mixture into shells. Place in 9x12 baking dish. Freeze. *Prepare after freezing: defrost spinach manicotti. In a frypan, heat olive oil. Sauté onion garlic and tomatoes until heated through and onions are cooked, about five minutes. Pour on top of manicotti. Bake in preheated 350F oven for 40 minutes or until done.
