Start Using....Pumpkins!

One of the things I love about Fall is the Plethora of Pumpkins. Seriously, they are EVERYWHERE. Of course, they are fun to carve and use as decorations but my favorite thing to do with pumpkins is.....cook. Suprised? Hehe. The pumpkin is a marvelous vegetable that is low in calories and fat and full of beta-carotene (an antioxidant) and potassium. It's seeds are also loaded with other goodies such as, protein, potassium, magnesium, zinc, iron, copper and essential fatty acids. Oh, and they taste good, thats the most important part :) I must admit, I usually use canned pumpkin in my recipes but have been reading up on how to cook and store fresh pumpkins. Anyway, I wanted to share some of my favorite pumpkin recipes with you....hope you enjoy! Also, please feel free to share any of yours in the comments section.

Another quick note...Dave finally got a spare moment and was able to blog about our weekend ride.

Thanks for posting these! Let me know if you are able to use your pumpkins and enjoy them. Nancy told me that it is impossible to get a pumpkin to taste as good as the pumpkin in a can. For all the work it is, she said it really isn't worth it... Although- pumpkin seeds are great and easy and nutritious! Really though, let me know what you find out! Thanks for your advice today- they are getting more intense little by little... There is no way I can do this for two more weeks, let alone through the weekend.... wish us luck!

Brit, have you really made all these already, just this fall? Please tell me you haven't because I'm about to feel really bad about myself. I am going to print off your page though because I LOVE pumpkin stuff. I'll let you know how it goes, i.e. if I start any fires, etc. :) Thanks!
